The Text blender creates is next to useless for deformation and animation.

It’s not just blender. All 3D software gives varying degrees of terrible topology when the letters need to be deformed in any way.

A fairly common task in modelling is to retoplogise the text, or any closed curve – like a logo, to work well as a subdivision surface model.
